Why indirect barbecuing?

Meat juice, fat or marinades can drip onto the chracoal embers when grilling direct. While doing so smoke can develop and result in flames. All this harasses the host, his guests and above all the neighbourhood. When this could be prevented or reduced to a tolerable level, barbecues would be used more often. Barbecuing is the oldest, healthiest as well as tastiest food preparation ever. Grilling is fun and promotes social interaction more than many other activities.

Where should the fat etc. go when grilling?

THÜROS offers 2 practicable solutions with its unique as well as compatible grill attachments.

1. Every THÜROS grill can be equipped with a water pan made of stainless steel which will be placed in the middle or on one side of the charcoal tray. Depending on where the water pan has been placed, fill up the charcoal into the reamaining tray. Fill the water pan with water or water plus herbs. When the charcoal has been heated up and is ready for barbecuing, place the goods above the water pan. Like this fat, marinades and so on drip into the water pan. The water pan is used best in combination with the barbecue method. For this method our BBQ Hood or swivelling hood is needed. For every size of a THÜROS barbecue a suitable hood is available. When using a BBQ or swivelling hood, it works the same as an oven or steamer which cooks the food gently as well as evenly.

2. An other option to barbecue indirect is to do it vertical with a charcoal burner for lateral heat in combination with a drip pan. Depending on the goods, it can be choosen between different spit options or even a meat basket which are moved by an electric motor (MA3560). With this accessories, even fatty meat can be grilled without having the fat drip into the charcoal. If you barbecue a duck as you can see on the image below, a rolled roast or other bigger meat cuts, there will not be a problem regarding flames, smoke and polycyclic aromatic hydrocarbons as they cannot accure. Then, barbecuing is an absolutely clean and healthy way to cook food. When grilling with this rotisserie set, embers can be placed in the charcoal burner as well as in the charcoal tray. In this case it is necessary to fill the drip pan with water. The food will be crispy and have an unique taste.
Furthermore, it is a nice sight to see the spit turning and it is less work for the person in charge of the BBQ. He just needs to check the food, embers and water level in the drip pan from time to time.

3. Now a remarkable method of indirect barbecuing with the THÜROS grill system. Take the new barbecue u. Incense attachment, now equipped as standard with a special water or grease tray.
